Choosing Mushrooms

There are so many varieties of mushrooms available today to enhance your meals that we are often confused as to which kind to choose for our dinner table. Historically the white mushrooms were the most common and multi purposed. But here are some of my favorites:


•    Oysters with their fan like appearance have a tender flavor and velvety texture.  Saute and serve in stir fries and salads
•    Portobello the largest of the mushrooms are great grilled, sautéed or stuffed.  They have a meat like texture and can be used as a vegetarian burger
•    The cremini mushrooms can substitute for the white mushroom and have a  more intense earthy flavor
•    The Shiitake or Chinese mushroom have a meaty texture and are great sautéed and especially braised
•    The enoki mushrooms which ressemble bean sprouts are great in sandwiches, salads or as a garnish
•    The caviar of mushrooms are the chanterelles or morels, sautéed and used in salads, sauces or risottos,
•    So if you’re in the words – Do eat these mushrooms!
