Smoked Trout, Avocado and Cheese Tortilla Slices |

These are great appetizers to serve at a dinner party. Smoked trout is usually available in the fish section of your supermarket. If it’s unavailable, use smoked salmon or another smoked fish.
2/3 cup light ricotta (5%) 1/4 cup light cream cheese, softened 11/2 Tbsp light mayonnaise (or low-fat sour cream) 11/2 Tbsp lemon juice 1/2 tsp Dijon mustard pinch of pepper 2 Tbsp chopped fresh dill (or ½ tsp dried dill) 1 cup baby spinach 1/3 cup diced avocado 1/2 cup finely diced red bell pepper 1/4 cup finely diced red onion 4 oz smoked trout, flaked 4 large flour tortillas |

- Beat the ricotta, cream cheese, mayonnaise, lemon juice, mustard and pepper together in a food processor, or in a bowl using an electric mixer, until smooth. Stir in the dill.
- Divide and spread the mixture evenly over the 4 tortillas. Sprinkle each one evenly with spinach, avocado, red pepper, onion and trout. Roll up tightly.
- Wrap rolls in plastic wrap and chill until just cold. Cut each tortilla on the diagonal, into 6 pieces.
