Rose's Light Nut and Dried Fruit Granola |

Ever since I read that the usual serving size of granola, about 3 ounces, contains 360 calories and 18 grams of fat, I decided my goal was to create a delicious, healthier granola recipe. This one is so good I can barely keep it stocked in my pantry. I even send packages by courier to my two children at university! The trick is keeping the oil to a minimum and substituting orange juice for part of the oil. If you prefer dried fruit that is baked-it's much chewier-add it to the granola mixture before baking. If you want the granola crisper, leave it in the oven with the heat off for another two hours. Feel free to substitute any dried fruit you like. | 2 cups rolled oats | 1/4 cup orange juice | | 1/2 cup all-purpose flour | 3 Tbsp pure maple syrup | | 1/2 cup brown sugar, packed | 1/2 cup chopped nuts of your choice | | 1 tsp ground cinnamon | 1/4 cup diced dried apricots | | 1/2 tsp ground ginger | 1/4 cup diced dried cranberries | | 3 Tbsp vegetable oil | |
- Preheat the oven to 300°F. Line a baking sheet with aluminum foil and spray with vegetable oil.
- Combine the oats, flour, sugar, cinnamon, ginger, oil, orange juice, maple syrup and nuts in a mixing bowl; mix thoroughly. Place on the prepared baking sheet and bake for 35 minutes, tossing once to prevent burning.
- Add the dried fruit. Serve immediately or store in an airtight container.
