Banana Chocolate Chip Muffins |

Coffee shop muffins are definitely high in calories and fat-sometimes 600 calories and 30 grams of fat or more! This muffin recipe using mashed bananas and yogurt eliminates the need for a lot of oil. It's perfect for a snack or a lighter dessert.
| 3/4 cup ripe bananas, mashed (about 1 1/2 medium bananas) |
1 cup all-purpose flour |
| 1/2 cup granulated sugar |
1 tsp baking powder |
| 1/4 cup vegetable oil |
1 tsp baking soda |
| 1 egg |
1/2 cup low-fat plain yogurt (or low-fat sour cream) |
| 1 tsp vanilla |
1/4 cup semi-sweet chocolate chips |
- Preheat oven to 375ºF. Spray 12 muffin cups with vegetable oil.
- Using an electric mixer, beat together bananas, sugar, oil, egg and vanilla in a large bowl until well mixed.
- In another bowl, combine flour, baking powder and baking soda. Stir the banana and flour mixture together. Stir in the yogurt. Fold in the chocolate chips.
- Divide the batter among the prepared muffin cups and bake in centre of oven for 15 minutes and a tester inserted in the middle of the muffin comes out clean. Turn out and serve immediately.
