MASHED POTATOES 1 lb medium Yukon Gold potatoes, peeled and cubed (about 1 1/2 cups) 2 tsp vegetable oil 1 cup diced onion 1 tsp crushed garlic 1/4 cup shredded cheddar cheese 1/4 cup low-fat sour cream 1 Tbsp olive oil 1/4 tsp salt pinch of pepper

MEATLOAF 12 oz extra-lean ground beef 1 egg 1/4 cup barbecue sauce (or ketchup) 1/4 cup seasoned dry breadcrumbs 1/4 cup finely diced green onions 1 1/2 tsp crushed garlic 1/2 tsp dried basil leaves pinch of salt and pepper

TOPPING 2 Tbsp shredded cheddar cheese 1 Tbsp grated Parmesan cheese |

- Preheat the oven to 375°F. Line the bottom and sides of a 9- x 5-inch loaf pan with foil or parchment paper.
- To make the mashed potatoes, add the potatoes to a large saucepan and cover with water. Boil for 15 minutes or just until tender. Drain and mash well.
- Meanwhile, in a nonstick skillet lightly coated with cooking spray, heat the oil over medium heat. Cook the onion and garlic for 8 minutes or until browned. Stir into the mashed potatoes, along with the 1/4 cup cheddar cheese. Add the sour cream, olive oil and salt and pepper, mixing just until combined.
- To make the meatloaf, combine the ground beef, egg, barbecue sauce, breadcrumbs, green onions, garlic, basil and salt and pepper in a bowl. Pat into a loaf pan and bake for 20 minutes. Remove from the oven and spread the mashed potatoes over the meatloaf. Sprinkle with the 2 Tbsp cheddar cheese and Parmesan cheese. Bake another 10 minutes or until the internal temperature reaches 165°F. Let rest 10 minutes before slicing.
