Sweet Potato, Apple & Raisin Casserole |

This hearty casserole is a favourite of many and is a great addition to Fall Feasts and Thanksgiving dinners. It’s a perfect side-dish for even the pickiest of vegetable eaters – the sweet, candy-like flavours appeal to kids and adults alike. - 1 lb sweet potatoes, peeled and cubed 500 g
- 3/4 tsp ground ginger 4 mL
- 1/4 cup honey or maple syrup 50 mL
- 3/4 tsp ground cinnamon 4 mL
| - 2 tbsp margarine, melted 25 mL
- 1/4 cup raisins 50 mL
- 2 tbsp chopped walnuts 25 mL
- 3/4 cup cubed peeled sweet apples 175 mL

- Preheat oven to 350oF (180oC). Prepare a baking dish sprayed with nonstick vegetable spray.
- Steam or microwave sweet potatoes just until slightly underdone. Drain and place in baking dish.
- In small bowl, combine ginger, honey, cinnamon, margarine, raisins, walnuts and apples; mix well. Pour over sweet potatoes and bake, uncovered, for 20 minutes or until tender.
