Sweet Potato, Apple & Raisin Casserole
This hearty casserole is a favourite of many and is a great addition to Fall Feasts and Thanksgiving dinners. It’s a perfect side-dish for even the pickiest of vegetable eaters – the sweet, candy-like flavours appeal to kids and adults alike.
  • 1 lb sweet potatoes, peeled and cubed 500 g
  • 3/4 tsp ground ginger 4 mL
  • 1/4 cup honey or maple syrup 50 mL
  • 3/4 tsp ground cinnamon 4 mL
  • 2 tbsp margarine, melted 25 mL
  • 1/4 cup raisins 50 mL
  • 2 tbsp chopped walnuts 25 mL
  • 3/4 cup cubed peeled sweet apples 175 mL
  1. Preheat oven to 350oF (180oC). Prepare a baking dish sprayed with nonstick vegetable spray.
  2. Steam or microwave sweet potatoes just until slightly underdone. Drain and place in baking dish.
  3. In small bowl, combine ginger, honey, cinnamon, margarine, raisins, walnuts and apples; mix well. Pour over sweet potatoes and bake, uncovered, for 20 minutes or until tender.

Make Ahead: You can peel and cube the sweet potatoes earlier in the day and refrigerate them until needed.
