Asparagus Bundles Wrapped with Goat Cheese and Prosciutto

This substantial vegetable dish with its colorful and elegant presentation is a great way to complete the dinner entrée. Prosciutto and goat cheese bring out the subtle flavor of asparagus. You can substitute thinly sliced roast turkey in place of the prosciutto.

RECIPE INSTRUCTIONS
1. Preheat the oven to 400°F. Spray a baking sheet with cooking oil.

2. Place the prosciutto flat on a clean work surface. Divide the goat cheese among the prosciutto slices, spreading it thinly down the center. Place 3 to 4 asparagus spears crosswise on top of each slice of prosciutto. Wrap the prosciutto tightly around the asparagus and transfer to the prepared baking sheet. Spray the bundles with cooking oil.

3. Bake in the centre of the oven for 10 minutes or just until the asparagus turns bright green and is slightly tender. Garnish with red pepper.

1 lb trimmed asparagus
1/2 cup goat cheese, softened
2 Tbsp finely diced red bell pepper
