Serving my traditionally light recipe in a skillet is really my definition of comfort food!
RECIPE INSTRUCTIONS
1. Preheat the oven to 350°F. Spray a 10” oven proof skillet with cooking oil.
2. To make the brownies: Combine the sugar, oil, egg and vanilla in a bowl and mix well. Add the cocoa, mixing it in well. Add the flour, baking powder, yogurt and chocolate chips, mixing just until combined and smooth. Don’t overmix.
3. Pour the batter into the prepared skillet. Bake in the centre of the oven for 15 minutes, just until set. Do not overbake. Sprinkle with icing sugar, if desired. Serve with frozen yogurt or light ice cream if using.
