Caramelized Banana Streusel Cake

My Caramelized Banana Streusel Cake is an outstanding upgrade to traditional banana bread. Sautéing the bananas in brown sugar and vegetable oil gives the cake a totally different taste and texture!

RECIPE INSTRUCTIONS
1. Preheat the oven to 350°F. Spray a 9-inch springform pan with oil.
2. Slice the bananas thinly and add to a large skillet with the sugar, oil and cinnamon. Sauté for 4 minutes. Let cool for 10 minutes and mash.
3. To make the cake In a large bowl, combine the oil, sugar, eggs, vanilla and sour cream until smooth. Add the mashed banana. Add the flour, baking powder and soda and combine just until the flour is incorporated.
4. To make the streusel Combine the brown sugar, cocoa, cinnamon and chips if using.
5. Pour half the cake batter into the pan, sprinkle with half the streusel, add the remaining batter and top with the rest of the streusel. Bake for 40 to 45 minutes or until a tester comes out clean.

INGREDIENTS
3 large ripe bananas (about 3 cups)
¾ cup brown sugar
2 Tbsp vegetable oil
¼ tsp cinnamon

1⁄3 cup vegetable oil
1 cup granulated sugar
2 eggs
1½ tsp vanilla extract
1⁄3 cup reduced-fat sour cream
1¾ cups all-purpose flour
1½ tsp baking powder
1 tsp baking soda
Streusel
¾ cup brown sugar
4 tsp cocoa
½ tsp cinnamon
¼ cup semisweet chocolate chips (optional)

NOTES
Makes 14 servings.

Baking time: 45 minutes

Make ahead: Make the cake up to a day in advance. It freezes well for up to a month.
