Cucumber Raita

Invoke an Indian theme by serving this light cucumber raita.

RECIPE INSTRUCTIONS
1. Combine all ingredients, refrigerate until chilled. Serve with Naan (Indian bread)

INGREDIENTS
2 cucumbers, peeled, seeded and shredded
1 cup plain yogurt
1 scallion, minced (white and green parts)
1 tablespoon chopped fresh mint (1/2 tsp dried)
