This Daikon, Carrot and Bell Pepper Asian Slaw with a peanut sauce is an easy vegetarian side. It makes a great pairing with grilled chicken, fish or beef.
1. Place all ingredients for salad in a large serving bowl.
2. Combine ingredients for dressing until smooth. Pour over vegetables and toss well.
2 cups thinly sliced daikon
2 cups thinly sliced carrot
2 cups thinly sliced red pepper
2 cups thinly sliced green onions
1/3 cup cilantro
¼ cup light coconut milk
2 Tbsp peanut butter
2 tsp light soy sauce
2 tsp sesame oil
2 tsp rice vinegar
1 tsp honey
1 tsp minced ginger and garlic
