This easy Flourless Chocolate Cake is the best chocolate cake recipe. It is rich, decadent, and the perfect dessert for any celebration. It’s gluten-free and super decadent – great for Passover.
1. Preheat oven to 350 F. Spray an 8” spring form pan with vegetable oil
2. Melt chocolate in glass bowl in microwave at high for 1 ½ minutes. Stir until melted, if not add another 20 seconds. Add sugar and whisk until combined. Add oil, vanilla, cinnamon, salt and eggs and mix until well combined. Add cocoa and mix until combined. Pour into pan and bake for 25 – 30 minutes just until centre is just cooked. Do not overbake.
3. Cool or refrigerate and dust with icing sugar and melted white chocolate if desired.
1 cup (250ml) semi-sweet chocolate chips
1/2 cup (125ml) oil
2/3 cup (150 ml) sugar
1 tsp (5ml) vanilla extract
1 tbsp (15 ml) strong coffee or
chocolate liquor (optional)
1/8th tsp (0.5ml) salt
3 large eggs
1/2 cup (125 ml) cocoa powder
1/2 cup (250 ml) semi sweet chocolate chips
1/4 cup (50 ml) evaporated milk
