With barbeque season in full swing we are all aware of the dangers of high heat grilling.

Flare ups can cause carcinogens in the meat. New studies show that a combination of a marinade with spicy herbs for beef, poultry or fish can do more than just tenderize and flavor your food.

It forms a seal around the food and prevents carcinogens from penetrating. The best news is that you only need a minute to get these benefits! If the food marinates too long the antioxidants powers are reduced. The marinade must include an acid like vinegar, juice and some spices such as hot peppers, ginger or garlic which contain antioxidants. It also helps to lower the temperature to avoid any flare ups, pick chicken or fish rather than red meat and remove as much fat as possible.
