What a great combination pumpkin, banana and dates make in a loaf. You may never go back to your old banana loaf recipe again. Used canned pumpkin puree never pumpkin pie filling which has added sugar and spices.
2 ripe bananas, mashed
2 eggs
⅓ cup vegetable oil
1 ⅓ cups canned pumpkin puree
1/2 cup honey
2/3 cup brown sugar
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1 cup dried dates
Preheat oven to 350 F. Spray a 9” x 5” loaf pan with vegetable oil
- In bowl combine bananas, eggs, oil, pumpkin, honey and sugar. Mix well. Add remaining ingredients and mix just until flour is incorporated.
- Pour into pan and bake for approx. 40 – 50 minutes just until tester comes out dry
