What a great combination pumpkin, banana and dates make in a loaf. You may never go back to your old banana loaf recipe again. Used canned pumpkin puree never pumpkin pie filling which has added sugar and spices.

2 ripe bananas, mashed
2 eggs
⅓ cup vegetable oil
1 ⅓ cups canned pumpkin puree
1/2  cup honey
2/3  cup brown sugar
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4  teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1  cup dried dates

Preheat oven to 350 F.  Spray a 9” x  5” loaf pan with vegetable oil

  1. In bowl combine bananas, eggs, oil, pumpkin, honey and sugar.  Mix well.  Add remaining ingredients and mix just until flour is incorporated.
  2. Pour into pan and bake  for approx. 40 – 50 minutes just until tester comes out dry
