Roast Beef, Hummus and Avocado Wraps

Forget the ordinary deli and salty roast beef sandwiches. I like to use the real thing. You can ask for homemade, quality roast beef at your supermarket, thinly sliced. This is what will make the sandwich outstanding. The combination of hummus and avocado is delicious. You can also substitute thinly sliced turkey or chicken breast.

RECIPE INSTRUCTIONS
1. Divide the hummus evenly among the 4 tortillas and spread over each one. Top with the roast beef, avocado, onion and shredded cheese. Fold in sides of each tortilla and roll.

2. Place the wraps in a heated nonstick grill pan lightly coated with cooking spray and cook for 2 minutes on each side or just until warmed through. Cut in half and serve.

2/3 cup hummus
4 large flour tortillas
6 oz medium-rare roast beef
2/3 cup chopped ripe avocado
1/3 cup finely chopped red onion
3/4 cup shredded aged cheddar cheese
