2 large firm apples cut into 8’s
1 tbsp olive oil

Dressing
2 tablespoons cider vinegar
2 tablespoons olive oil
1 tablespoon maple syrup
1/2 teaspoon Sriracha chili sauce
Salt and pepper

Salad
8 cups sliced kale
4 pitted dates chopped
4 oz goat cheese crumbled
½  cup toasted chopped pecans

1. Preheat oven to 375 F.  place apple pieces on a baking sheet lined with foil and sprayed with vegetable oil.  Drizzle with 1 tbsp olive oil.  Roast 20 minutes until tender.
2. Dressing – whisk all ingredients together
3. In bowl add greens, dates and cheese and dressing mix well. sprinkle with pecans and serve.
