Ingredients

4 – 6 cups cubed watermelon
2 cups sliced cucumber in rounds
½ cup diced red onion
3 oz feta cheese cut into cubes
1 medium ripe avocado diced
3 tbsp chopped fresh mint
2 tbsp olive oil
2 tbsp lemon juice
2 tsp honey
Salt and pepper

Instructions

  1. Place watermelon on serving plate, add cucumber, onion, feta, avocado and mint.
  2. Combine olive oil, lemon juice, honey and pepper and salt, pour over salad. Enjoy!
