You’ve got to try my lighter version of this popular bar. Full of protein and lower in sugar, they are great for bringing on the go, or enjoying at home. Give them a try and let me know what you think! Recipe details below:
INGREDIENTS
2 ½ cups rolled oats
¼ cup oil (any variety)
¼ cup honey
1/3 cup well packed brown sugar
½ tsp baking soda
¼ tsp salt
1/3 cup sliced almonds
1/3 cup raisins or dried cranberries
(melted chocolate for drizzle – optional)
INSTRUCTIONS
1. Process ½ cup rolled oats until it becomes a fine flour.
2. In bowl add oil, honey, brown sugar, baking soda and salt, processed oats, full rolled oats, raisins or cranberries and almonds mix well. Use fingers to blend together.
3. Line 8” x 8” square pan with parchment paper and press mixture into pan. Press down with either fingers or a bowl.
4. Bake at 350 f for 20 minutes. Press again top of bars while still hot. Let cool then drizzle with melted chocolate if using and cut into bars
5. Drizzle with melted chocolate and icing sugar if desired. Enjoy!
