This isn’t your Grandma’s coffee cake! The classic coffee cake gets a fresh twist with my Apple Cream Cheese Coffee Cake recipe. The addition of flavourful fruit makes it a perfect spring dessert.
RECIPE INSTRUCTIONS
1. Preheat oven to 350 F. Spray a bundt pan with vegetable oil
2. Cream cheese filling: In a small food processor combine ingredients until smooth.
3. Cake: In a large bowl, combine eggs, both sugars, oil, applesauce and vanilla until smooth. Add apples.
4. Add remaining dry ingredients and mix just until combined.
5. Spoon 2/3 of cake batter into bundt pan. Spoon cream cheese filling over top. Swirl filling through apple mixture using a knife. Spoon remaining apple cake mixture over top.
6. Bake for about 40 – 50 minutes or until the tester comes out clean. Cool for about 2 hours. Invert on serving plate.
7. Frosting: Mix ingredients until smooth. If too dry, add a little more water. Drizzle over cake. Dust with additional icing sugar.

1 small egg
1 ½ Tbsp flour
1 tsp vanilla extract

2 cups diced peeled apples
2 cups flour
1 ½ tsp cinnamon
¼ tsp salt
1 ½ tsp baking powder
½ tsp baking soda
¾ tsp nutmeg
¼ tsp allspice
Frosting
1 cup icing sugar
2 Tbsp maple syrup
1 Tbsp water
