Asparagus with Caesar Dressing

Asparagus is always an elegant addition to a meal and this Caesar dressing is sensational. To make it even more elegant, use a cheese slicer or a vegetable paring knife to garnish with thin curls of fresh Parmesan overtop. As an alternative to steaming, roast the asparagus for 15 minutes in a 425ºF oven, turning it after 10 minutes. Asparagus is a source of vitamin C, vitamin A and iron, and is an excellent source of folate. 

RECIPE INSTRUCTIONS
1. Steam the asparagus until tender, approximately 4 minutes. Place on a serving dish.

2. Combine 1/2 Tbsp of the Parmesan, olive oil, lemon juice, water, anchovies, garlic, and mustard in a bowl. Pour over the asparagus. Sprinkle with the remaining 1/2 Tbsp Parmesan.

1 lb asparagus, trimmed
1 Tbsp grated Parmesan cheese
1 Tbsp olive oil
2 tsp freshly squeezed lemon juice
2 tsp water
2 anchovy fillets, chopped
1 tsp crushed fresh garlic
1/2 tsp Dijon mustard
