Beef Pizza with Aged Cheddar and Feta

This is a great recipe for children, teens and adults young at heart! I even serve it as an appetizer. The lean beef that replaces the bread in standard pizzas is a great source of nutrition and protein.

RECIPE INSTRUCTIONS
1. Preheat the oven to 400ºF. Spray a 9-inch spring form pan with cooking oil.

2. Heat the oil in a non-stick saucepan. Add the 2 cups chopped onion and garlic and sauté for 8 minutes, or just until the onions begin to brown.

3. Place the cooked onion mixture in a large bowl and add the beef, breadcrumbs, egg, 1/4 cup finely diced onion, tomato sauce, dried basil, oregano, Parmesan cheese, salt and pepper; mix well. Pat the mixture into the prepared spring form pan. Bake in the center of the oven for 20 minutes. Remove from the oven.

4. Spread the tomato sauce overtop and sprinkle with the cheese and green onion. Bake for a further 5 minutes, or until the cheese melts. Remove the sides of the pan and garnish with a sprinkling of fresh basil.
