Farro is a wheat-based nutty, slightly sweet and pleasingly chewy grain. It is loaded with fiber, protein and some essential minerals and vitamins. Using it in this Mediterranean-inspired salad is a nice change from your usual grains!
1. In a pot, cover farro with water and bring to a boil. Lower heat, cover and simmer for 25-35 minutes until slightly tender. Drain and rinse with cold water. Place in serving bowl.
2. Add all remaining ingredients, toss and serve.
1 cup uncooked farro
4 cups arugula
1 1/2 cups chickpeas, drained and rinsed
1 cup diced red pepper
1 cup diced cucumber
1/2 cup crumbled feta cheese
1 tsp minced garlic or 1 large garlic clove
3 Tbsp olive oil
3 Tbsp lemon juice
Salt and pepper
