I added this recipe at the last minute because once I served them to my family there was a demand they had to be included! A great gluten free “healthyish” cookie provides healthy fats and protein to your treat. You substitute the chocolate chips for dairy free chips available now in most food stores if you want to avoid the diary.
INGREDIENTS
1 cup creamy natural peanut or almond butter
1/2 cup granulated or coconut sugar
1 large egg
½ tsp baking soda
1/8th tsp salt
1 cup semi sweet chocolate chips
RECIPE INSTRUCTIONS
1. Preheat oven to 350 F. Line a baking sheet with foil sprayed with vegetable oil.
2. In bowl combine peanut butter, sugar, egg, soda, salt and chips until well mixed.
3. Drop dough by tbsp about 2 “ apart. Makes about 24 cookies.
4. Bake for 12 – 15 minutes or until lightly browned. Cool.

Natural peanut butter, meaning no added sugar or salt is an excellent source of protein. The unsaturated fat improves heart health. It also is an excellent source of potassium which counteracts the danger of sodium causing high blood pressure.
