Grilled Chicken over Arugula, Quinoa and Hummus

Healthy, quick and delicious.  No better words to describe this meal.  It’s the perfect dinner for two!

RECIPE INSTRUCTIONS
1. Spread 1/3 of a cup of hummus on a serving dish.
2. Dress arugula with olive oil and lemon. Place over hummus
3. Sprinkle quinoa over arugula with crumbled feta
4. Sliced grilled chicken into medallions and place on top of arugula and quinoa. Garnish with diced tomatoes.

INGREDIENTS
1/3 cup Hummus (store bought or homemade)
1 ½ cup arugula
½ cup cooked quinoa
1 oz crumbled feta
2 tsp olive oil
2 tsp lemon juice
1 large chicken breast
¼ cup diced tomatoes
