Grilled Salmon over Daikon, Red Pepper and Sugar Snap Slaw with Peanut Sauce

Enjoy this colourful Asian-inspired salmon dish all year round, either on the grill or on the stove. A healthy homemade slaw and peanut sauce make this a standout meal.

RECIPE INSTRUCTIONS
1. Add all slaw ingredients to bowl.
2. Prepare dressing and pour all but 3 Tbsp over top slaw and mix well.
3. Grill salmon at 400 F just until cooked – 10 minutes per inch of cooking time. Place over top slaw and serve.

INGREDIENTS
1 ½ lb salmon fillet

Slaw
1 large red pepper, sliced into matchstick pieces
2 cups sugar snap peas, cut into matchsticks
2 cups daikon, cut into matchsticks
2 cups carrots, cut into matchsticks
2 tsp sesame seeds

Peanut Sauce
2 Tbsp cup light coconut milk
1 Tbsp natural peanut butter
1 tsp sesame oil
1 tsp rice vinegar
1/2 tsp honey
1/2 tsp finely chopped garlic
1/4 tsp finely chopped ginger
1/4 tsp hot chili sauce
