Lemon Couscous with Cherry Tomatoes, Dill and Feta

This is a wonderful, light-tasting couscous that can be served as a side dish or main dish if some protein is added. To prevent the couscous from lumping, add a spray of cooking oil to the stock. Feel free to substitute whatever herbs you have on hand.

1. Bring the couscous and stock to a boil. Remove from the heat, cover and let sit for Cook Time: 5 minutes 5 minutes. Transfer to a large bowl and fluff with a fork. Cool.

2. Add the remaining ingredients and toss to combine. Serve at room temperature.

1 cup couscous
1 cup chicken or vegetable stock
1 tsp crushed fresh garlic
1/4 cup chopped fresh mint
1/4 cup chopped fresh dill
1/3 cup crumbled light feta cheese
pinch freshly ground black pepper
1 Tbsp olive oil
2 tsp grated lemon rind
1 cup halved cherry tomatoes
1/2 cup diced cucumber
1/4 cup chopped green onion
1/4 cup freshly squeezed lemon juice
