A refreshing twist on a classic dish makes this a perfect summer side. The unexpected combo of lemon and mashed potatoes will be a new favourite.
1. Boil potatoes just until fork tender. Drain and put back on low heat to dry well. Mash and add remaining ingredients.
2. Dressing: Combine all ingredients and mix into potatoes. Serve.
2 lbs Yukon Gold potatoes, peeled and cut into quarters
½ cup light yogurt or sour cream
Zest of lemon
2 Tbsp finely chopped parsley
1/3 cup finely diced green onions
2 Tbsp lemon juice
1 ½ tsp Dijon mustard
¼ cup olive oil
1 tsp minced garlic
Salt and pepper
