Linguini with Tomatoes and Three Cheeses

The hot pasta melts the cheese and warms the tomatoes just enough to soften them slightly-delicious! The variety of cheese is what makes this an outstanding pasta dish. If you ever need to cook your pasta early in the day, rinse it with cold water and drain. When ready to serve, run it under hot water for 30 seconds and then add the rest of your ingredients.

RECIPE INSTRUCTIONS
1. Bring a large pot of water to a boil and cook the linguini according to the package directions, approximately 8 to 10 minutes, until tender but firm. Drain and place in a serving bowl.

2. Add the remaining ingredients. Toss until well combined and serve immediately.

INGREDIENTS
8 oz linguini
2 cups diced plum tomatoes
1/3 cup crumbled goat cheese
3/4 cup shredded part-skim mozzarella cheese
1/2 cup chopped green onion
1/2 cup chopped fresh basil or parsley
1/4 cup grated Parmesan or Asiago cheese
2 Tbsp olive oil
2 tsp minced fresh garlic
A pinch of salt and freshly ground black pepper
