Poached pears make a delicious dessert. I’ve added a twist to the classic version of this recipe by serving them with greek yogurt instead of ice cream.

4 firm pears with stem (skin on)
½ cup apple juice
½ cup maple syrup
1/3 cup water
1 cinnamon stick
½ cup Greek vanilla yogurt

  1. Bring apple juice, maple syrup, water and cinnamon stick to a boil
  2. Meanwhile using a paring knife scoop out core through the bottom of the pears leaving the stem intact. Gently place in boiling liquid, cover and simmer about 12 minutes just until tender.  Let stay in maple mixture for 1 hour or just until slightly cooled.
  3. Remove pears and bring mixture to a boil and cook for about 15 minutes or until bubbly and syrupy.  If too thick add a little water.
  4. Place yogurt on 4 dishes, place a pear over top and spoon glaze over top.
