Muesli with strawberries and dried apricots

 

This is a delicious cold oat cereal often served in bed-and-breakfast inns. It’s filling and nutritious and will keep you going the entire morning.

RECIPE INSTRUCTIONS
Combine the oats, milk, orange juice, brown sugar, maple syrup, orange zest, cinnamon and vanilla in a large bowl and stir until well combined. Refrigerate for at least 4 hours or overnight. Add the yogurt, strawberries and apricots and serve.

INGREDIENTS
2 cups large rolled oats
2/3 cup low-fat milk
2/3 cup orange juice
1 Tbsp brown sugar
2 Tbsp maple syrup
1 tsp orange zest
1/2 tsp cinnamon
1 tsp vanilla extract
1 cup low-fat plain yogurt
1 cup sliced strawberries
1/3 cup chopped dried apricots

Nutrition Watch: Dried fruit does not contain water, and is very high in sugar content. Owing to high calories in dried fruits, it is advisable to consume them in only moderate quantities. Dried apricots are a good source of potassium and a very good source of vitamin A.
