Nut and Citrus Couscous

RECIPE INSTRUCTIONS
1. Couscous: Bring stock to boil. Add couscous, stir, cover and remove from heat. Let sit covered for 5 minutes. Fluff with fork and add to serving bowl.

2. Add remaining ingredients.

3. Dressing: Combine all ingredients pour over couscous and mix.

INGREDIENTS
COUSCOUS:
1 cup vegetable or chicken stock
1 cup couscous
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup chopped green onions
3 tbsp chopped red onion
1/4 cup red bell pepper
1/4 cup toasted mixed nuts (almonds / pecans)
2 tbsp chopped parsley
2 tbsp chopped cilantro

DRESSING:
1 tbsp. olive oil
2 tbsp. orange juice concentrate
2 tbsp. lemon juice
1 tsp lemon rind
2 tsp orange rind
2 tbsp. honey
1 tsp minced garlic
