A grilled or roasted pork tenderloin is delicious with a fresh salsa. The flavours of the mango and avocado pair beautifully with the pork. Searing the pork maintains the juices. Since the avocado is marinated with the lemon juice, this salsa is fine, made early in the day.
1 ½ lb pork tenderloin (one or two small)
¾ cup finely diced mango
½ cup finely diced ripe avocado
¼ cup finely diced red bell pepper
3 Tbsp finely diced red onion
3 Tbsp chopped cilantro
2 tsp olive oil
1 tsp minced jalapeno pepper
1 tsp lemon juice

Cook Time: 15 minutes
- Preheat oven to 400 F. In skillet or grill pan, sear pork on all sides for about 3 minutes. Place on baking sheet lined with foil and bake tenderloin for about 15 minutes, or until temperature reaches 135 – 140 F for medium doneness.
- In a bowl, combine mango, avocado, bell pepper, onion, cilantro, oil, jalapeno, juice and salt. Slice pork thinly and spoon salsa over top.
Health Tip: Pork tenderloin is a very trendy meat today due to its leanness. Pork has less fat than a chicken breast and you can now enjoy it medium cooked due to improved agricultural differences.
Children’s Tip: Children will love this sweet salsa overtop the pork. You can always dice the pork and mix it into the mango avocado salsa.
