Shepherds Pie with Vegetables & Mashed Potato Topping

Try this yummy comfort food.

1. Preheat oven to 350 F. Spray an 8” x 8” baking dish with vegetable oil.

2. In large non stick skillet sprayed with vegetable oil, add oil and onion and sauté for 3 minutes. Add garlic and carrot and sauté for 3 minutes. Add beef and sauté for 5 minutes or until no longer pink, breaking up meat as it cooks.

3. Add flour and cook for 1 minute. Add tomato paste, tomato sauce and peas, cover and cook on low heat for 3 minutes or until thickened. Place in baking dish.

4. Meanwhile cover potatoes with water and boil for 10 minutes or just until tender. Drain and add olive oil, milk, parmesan cheese, salt and pepper and mash until smooth. Spread over beef filling, sprinkle with cheddar cheese and bake for 15 minutes.

2 tsp vegetable oil
1 cup finely diced onion
2 tsp crushed garlic
1/2 cup finely diced carrot
12 oz extra lean ground beef
1 tbsp all purpose flour
1 tbsp tomato paste
1/2 cup pasta tomato sauce
1/2 cup green peas 1 1/2 lb peeled and diced Yukon gold potatoes
2 tbsp olive oil
2 tbsp 2% evaporated milk or regular milk
2 tbsp grated parmesan cheese
1/4 tsp salt
1/8th tsp groud pepper
3/4 cup grated cheddar cheese
