Turkey Burgers with Dried Apricot and Cranberry Salsa

The flavours of the meat and dried fruit salsa go together so well. Feel free to substitute another meat, such as ground chicken or pork.

RECIPE INSTRUCTIONS
1. To make the burgers In a skillet, add oil and onions. Sauté until tender, about 5 minutes.
2. Place turkey in a bowl, add garlic, barbecue sauce, egg, breadcrumbs, and salt and pepper and form into 6 burgers. Grill or sauté just until cooked to 160°F (about 15 minutes).
3. To make the salsa: Meanwhile, in a bowl, add the apricots, cranberries, bell pepper, green onion, garlic, cilantro, jam, maple syrup, mustard and apple cider. Divide the topping over the burgers.

2 tsp vegetable oil
1 cup diced onions
1½ lb ground turkey
2 tsp crushed garlic
3 Tbsp barbecue sauce
1 egg
3 Tbsp seasoned dry breadcrumbs
pinch of salt and pepper

Salsa
3 Tbsp diced dried apricots
3 Tbsp dried cranberries
¾ cup diced red bell pepper
¼ cup diced green onion
½ tsp minced garlic
3 Tbsp chopped cilantro
2 Tbsp apricot jam
2 tsp maple syrup
½ tsp Dijon mustard
1½ tsp apple cider
