This recipe makes a great appetizer or dessert.

12 cubes (1” x 1”) of watermelon
6 – 1” cubes of feta cheese
6 mint or basil leaves
6 wooden skewers

(OPTIONAL TOPPING)
1 tbsp olive oil
2 tsp balsamic vinegar
Salt and pepper

  1. Place feta cubes between two watermelon cubes, adding a mint or basil leaf under the feta cube. Repeat with remaining cubes to make six stacks. Fasten with skewers. If using topping pour overtop cubes
