White Bean, Avocado, Corn and Tomato Salad in a Lime Vinaigrette

White kidney beans are creamier and sweeter than the red variety.  The texture and flavor matches well with creamy avocado, crisp corn kernels and sweet tomatoes.   If you don’t have fresh limes, bottled lime juice is an option or stick with lemon juice.

RECIPE INSTRUCTIONS

1. In serving bowl add beans, tomatoes, onion, cilantro, lime, oil, garlic and salt and pepper until well mixed. Gently fold in avocado. 

INGREDIENTS

2 (19 oz) cans white kidney beans (drained and rinsed)

1 large field tomato diced and seeded ( 2 cups)risotto

1/3 cup diced red onion

2 tbsp fresh chopped cilantro or basil

3 tbsp lime or lemon juice

3 tbsp olive oil

1 tsp crushed garlic

1/8th salt and pepper

2 small ripe avocados diced
