White Chocolate Raspberry Pie

This dessert will have your guests reaching for seconds! I use Greek yogurt and light cream cheese to lower the fat.

1. Preheat oven to 350 F. Spray a 9” pie pan with vegetable spray.
2. In a bowl, combine ingredients for crust. Add more water if needed until crust lightly holds together. Pat into bottom and sides of pan. Bake for 12 minutes. Meanwhile, make filling.
3. In small bowl microwave chocolate on medium heat for about 2 minutes or just until just melted. Stir until smooth.
4. In bowl of food processor and sugar, yogurt, cream cheese and beat until smooth. Fold in chocolate. Pour into crust and chill for at least 2 hours, decorate with berries.

2 ½ cups chocolate wafer crumbs
2 Tbsp granulated sugar
3 Tbsp oil
2 – 3 Tbsp water (more if needed)
1 cup white chocolate chips
½ cup sugar
½ cup vanilla Greek Yogurt
12 oz light cream cheese
1 ½ tsp vanilla extract
1 cup fresh raspberries
