No need to cook this asparagus. Shaving with a vegetable peeler is a great way to use asparagus as the base for a salad. The combination of flavours from the citrus, feta, and pesto go so well. Add some diced lean protein to make this a complete meal.
1 1/2 pounds (675 g) asparagus, trimmed
2 small oranges, peeled and segmented, cut in to 1/2-inch (1.27-cm) pieces
1 cup (125 g) crumbled feta cheese
1/3 cup (80 mL) pesto
1/8 tsp (0.5 mL) salt
1/8 tsp (0.5 mL) pepper
Garnish
1/3 cup (50 g) chopped toasted pistachios
1. With either a vegetable peeler or food processor with slicing blade shave asparagus into thin slices. Add to serving bowl.
2. Add oranges and feta. Add pesto and toss to combine, mixing well. Season with salt and pepper.
3. Top with pistachios and serve.
