1 ½ lb salmon filet
Salt and pepper
Pea pesto
2 tsp vegetable oil
1 cup onion diced
1 ½ tsp minced garlic
2 cups frozen green peas
2 tbsp olive oil
¼ cup 2 % evaporated milk
3 tbsp grated parmesan cheese
Salt and pepper
2 tbsp fresh chopped mint or basil
- Season salmon with salt and pepper. Grill or bake salmon at 425 F for 10 minutes per inch of thickness.
- Meanwhile prepare pea pesto. In skillet, add oil and sauté onions for 3 minutes just until tender. Add garlic and peas and cook for another 3 minutes
- Add to food processor along with milk, parmesan cheese, olive oil and salt and pepper until very smooth.
- Spread puree on serving dish with salmon over top. Garnish with fresh mint
