1 ½ lb salmon filet
Salt and pepper

Pea pesto
2 tsp vegetable oil
1 cup onion diced
1 ½ tsp minced garlic
2 cups frozen green peas
2 tbsp olive oil
¼ cup 2 % evaporated milk
3 tbsp grated parmesan cheese
Salt and pepper
2 tbsp fresh chopped mint or basil

  1. Season salmon with salt and pepper. Grill or bake salmon at 425 F for 10 minutes per inch of thickness.
  2. Meanwhile prepare pea pesto.  In skillet, add oil and sauté onions for 3 minutes just until tender. Add garlic and peas and cook for another 3 minutes
  3. Add to food processor along with milk, parmesan cheese, olive oil and salt and pepper until very smooth.
  4. Spread puree on serving dish with salmon over top.  Garnish with fresh mint
