These raspberry oatmeal squares are a great snack to keep on hand! The freeze well too. Perfect to enjoy at home, or on the go.

3 cups frozen raspberries or blueberries, defrosted and well drained
½ cup granulated sugar
1/3 cup orange juice
2 tbsp cornstarch
1/4 cup water
1 1/3 cups large flake rolled oats
1 cup all-purpose flour
¾ cup packed brown sugar
1/3 cup vegetable oil
2 tbsp water
1/3 cup chopped, toasted pecans
½ tsp cinnamon

  1. Preheat oven to 350 F. Spray an 8” x 8” square baking pan with vegetable oil.
  2. In a saucepan add berries, sugar and juice. Bring to a boil. Mix cornstarch and water in a small bowl, then add to berry mixture and cook on medium high heat until thickened, about 3 minutes.
  3. In a bowl combine oats, flour, sugar, oil, water, pecans and cinnamon just until crumbly.  Pat half the mixture into bottom of baking pan. Spoon berry mixture over top and pat down remaining crumb mixture. Bake for 30 minutes.
