Banana Chocolate Fudge Layer Cake

I don’t know anyone who doesn’t love the combination of banana and chocolate. This layer cake is divinely moist and tender — even the icing is lovely and light.

INGREDIENTS

BANANA CAKE

3 tbsp oil

1/3 cup granulated sugar

1 large egg

1 large (1/2 cup) ripe banana, mashed

1 tsp vanilla

3/4 cup all-purpose flour

1/2 tsp baking soda

1/4 cup low-fat yogurt or sour cream

CHOCOLATE FUDGE CAKE

3 tbsp oil

3/4 cup brown sugar

1 large egg

3 tbsp unsweetened cocoa powder

1/2 cup all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/3 cup low-fat yogurt or sourcream

FROSTING

1 cup (8 oz) light cream cheese

1 cup icing sugar

1/4 cup unsweetened cocoa powder

1 tbsp water

1 large  banana thinly sliced

RECIPE INSTRUCTIONS

Preheat the oven to 350°F. Spray two 8-inch round cake pans with vegetable spray.

1. Make banana cake: Combine oil and sugar in a large bowl or food processor; mix until smooth. Add egg, banana, and vanilla; mix until everything is well combined. In a small bowl, stir together flour and baking soda; add the flour mixture to the banana mixture in batches, alternating with the yogurt, just until combined. Pour the mixture into a prepared pan.

2. Make chocolate fudge cake: Combine oil, sugar, and egg in a large bowl; mix until everythingis well combined (the mixture may look curdled). In a small bowl, stir together cocoa, flour, baking soda, and baking powder; add the mixture to the batter in batches, alternating with the yogurt, just until combined. Pour mixture into a prepared pan.

3. Place both pans in the centre of the oven and bake for 15 to 20 minutes or until a tester inserted in the centre comes out clean.

4. Make frosting: In a small food processor or electric mixer, beat cheese, icing sugar, and cocoa and water until smooth.  If too thick add a little more water until spreadable.

5. Assemble cake: Put the banana cake on a cake platter; top with one quarter of the frosting. Thinly slice the banana and place slices over top. Put the chocolate cake over top and frost top and sides of cake.  Drizzle melted chocolate over top.
