Beef Tacos with Cheddar, Tomato and Avocado

Tacos are a perennial favourite. Making them yourself increases the flavour and nutrition. I like to use corn tortillas, which you can find in most well-stocked supermarkets.  Corn tortillas contain much less fat, less sodium and more fibre than flour tortillas. Definitely the winner!

1. In a skillet over medium heat, heat the oil. Add the onion and garlic and sauté for about 3 minutes, until softened. Add the red pepper, jalapeño, chili powder and cumin and sauté for another 3 minutes, until the pepper is softened and spices are fragrant. Add the beef and cook until no longer pink, about 3 minutes. Stir in the salsa and beans and cook until heated through.
2. Warm the tortillas in a microwave on high for 20 seconds. (Alternatively, wrap them in foil and bake in a preheated 400°F oven for 5 minutes.)
3. To serve, place about ⅓ cup of the beef mixture in the middle of each tortilla. Top with the cheese, tomatoes, lettuce and avocado.

2 tsp vegetable oil
3/4 cup diced onion
1 tsp minced garlic
1/2 cup diced red bell pepper
2 tsp chopped seeded jalapeño
1 tsp chili powder
1/2 tsp ground cumin
6 oz lean ground beef
⅓ cup medium salsa
⅓ cup canned black beans, rinsed and drained
6 small (6 inches) corn or flour tortillas
1/2 cup shredded light cheddar cheese
⅓ cup diced seeded tomato
⅓ cup shredded romaine lettuce
1/4 cup diced avocado
