2 lb cauliflower rice fresh or frozen (if frozen, thaw and squeeze out moisture)
1 red bell pepper sliced
1 small red onion sliced
3 tbsp olive oil
1 tsp minced garlic
Salt and pepper
1 ½ tbsp fajita seasoning (store bought)
2 tsp cumin
1 can chickpeas, drained and rinsed
3 oz crumbled feta cheese
1/3 cup chopped cilantro
2 chopped green onion
2 tbsp lemon juice
Preheat oven to 425 F

1. Cover a baking sheet with foil sprayed with vegetable oil

2. Combine cauliflower, bell pepper, red onion, olive oil, garlic, fajita seasoning, salt and pepper, cumin until blended.  Spread over baking sheet. Roast for 15 minutes, stir and roast another 15 minutes.

3. Add cheese, cilantro, green onion and lemon juice. Mix well and serve.
