I love this with a salad that has fruit or nuts in it. It also makes a fabulous sauce with seared tuna or flank steak. There are mild blue cheeses available; use the one your palate prefers.
RECIPE INSTRUCTIONS
1. Combine all the ingredients in the bowl of a small food processor and process until smooth. (Or, if a chunky consistency is desired, crumble the cheese and mix by hand.)
2. Serve at room temperature or chill.
