Here’s a quick and healthy meal idea – sheet pan gnocchi with roasted vegetables!

1 lb gnocchi
12 oz cubed bell peppers (approx. 2 bell peppers)
2 cups cherry tomatoes
1 small red onion cubed
4 garlic cloves minced
1/8th tsp salt and pepper
2 tbsp olive oil
2 tbsp freshly chopped basil
¼ cup grated parmesan cheese

1.Preheat oven to 450 F.  Line a large baking sheet with foil
2.Combine all ingredients except for basil and cheese in large bowl.  Spread out on baking sheet and cook for 20 minutes. Stirring half way.
3.Garnish with basil and cheese
