Fresh Fig, Prosciutto and Goat Cheese Salad

I was served a salad similar to this at a formal dinner party and it inspired me to create this version. It’s simple to make, yet the flavor combinations are outstanding and it presents beautifully. Be sure the figs are soft and ripe. For those who prefer not to eat meat, substitute smoked salmon for the prosciutto. Mesclun is sold as a salad mix at supermarkets, but you can use any lettuce you like.

RECIPE INSTRUCTIONS
1. Place the mesclun and fig wedges in a bowl and drizzle with oil and vinegar. Mix until well coated.

2. Place on individual serving plates and scatter the prosciutto, cheese and basil overtop.

INGREDIENTS
4 cups mesclun
8 fresh black figs, each cut into 8 wedges
1 Tbsp olive oil
1 1/2 tsp balsamic vinegar
1 oz prosciutto, chopped
1/4 cup crumbled goat cheese
1/4 cup chopped fresh basil or parsley
