Goat Cheese and Tomato Salad Wrap

This is a great vegetarian wrap that can be either a complete meal or a side dish. Non-vegetarians might want to add some grilled chicken or shrimp. Substitute any strong-tasting cheese for the goat cheese. 

RECIPE INSTRUCTIONS
1. Combine the goat cheese, tomatoes, cucumber, green onion, oil, vinegar, garlic and basil in a bowl, mixing well.

2. Place one-quarter of the goat cheese mixture along the center of a tortilla, leaving a 1-inch margin at the sides. Roll the bottom of the tortilla up and over the filling, fold in both the sides and continue to roll it up tightly. Repeat with the remaining tortillas and filling. Cut the rolls in half before serving.

INGREDIENTS
1/2 cup crumbled goat cheese
1 1/4 cups diced seeded plum tomatoes
1 1/4 cups diced English cucumber (skin on)
1/2 cup chopped green onion
4 large flour tortillas
2 tsp olive oil
2 tsp balsamic vinegar
1 tsp minced fresh garlic
1/4 cup chopped fresh basil or parsley

Make Ahead: Prepare the filling 4 hours in advance and refrigerate. Wrap an hour before serving and cover tightly.
