Mango Curry Chicken Wraps

This is a light, Indian-flavored wrap with just a hint of curry. The sweet mango goes well with the chicken and curry mayonnaise.

1. Combine the chicken, mango, red and green peppers, onion, mayonnaise, cilantro, sour cream, lemon juice, curry, salt and pepper in a large bowl.

2. Divide the lettuce evenly among the 4 tortillas and divide the chicken mixture over the top. Fold in the sides and roll. Cut each wrap in half and serve.

1 1/2 cups cooked and diced skinless boneless chicken breast
2/3 cup diced ripe mango
3/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/4 cup diced red onion
1/4 cup light mayonnaise
3 Tbsp chopped cilantro
1 Tbsp low-fat sour cream
1 Tbsp lemon juice
1 tsp curry powder
pinch of salt and pepper 1 cup shredded lettuce
4 large flour tortillas
