My orzo salad with shrimp and feta is a bright and delicious take on pasta salad.
1. In a pot of boiling water, cook orzo just until tender. Do not overcook. Drain and rinse with cold water. Add to serving bowl.
2. In a large skillet sprayed with vegetable oil, sauté shrimp and garlic, just until cooked. Cut into pieces or leave whole. Let cool.
3. Add remaining ingredients to orzo, along with shrimp and toss. Serve.
8 oz orzo pasta (rice shaped pasta)
8 oz deveined and shelled large shrimp
1 tsp minced garlic
1 cup cherry or grape tomatoes sliced in half
¾ cup diced English cucumber
4 oz crumbled feta cheese
1/3 cup diced black olives
1 tsp grated lemon zest
¼ cup lemon juice
2 chopped green onions
¼ cup chopped fresh mint
¼ cup chopped fresh dill
¼ cup olive oil
