Next time your kids want pizza, make this great pizza quesadilla. It’s a lot tastier and healthier.
RECIPE INSTRUCTIONS
1. Lightly coat a nonstick skillet with cooking spray, add the vegetable oil and set over medium heat. Add the garlic, onion and green pepper and sauté for 5 minutes or until vegetables have softened. Add the carrots and sauté another 5 minutes. Add the ground beef and cook for 3 to 4 minutes or until it is no longer pink. Remove from the heat and stir in the tomato sauce.
2. Divide the ground beef mixture evenly among the 4 tortillas, spreading it over one-half. Top with the cheeses and fold in half. Set a skillet or grill pan over medium heat and grill the quesadillas for 2 minutes per side or just until the cheese melts and the quesadilla is heated through. Cut each tortilla in half and serve.
